For 2 servings:

• Take 1 cup of rice, rinse well in several changes of water and drain. Then add 2 cups of freshwater to the rice in a large saucepan and bring to a vigorous boil.
• Turn the heat down very low, cover with a tight-fitting lid and simmer without stirring or peeking for 15 minutes.
• Turn the heat off and let the rice stand covered for 15 minutes before serving.
